Ingredients
For the Meat Filling
- 500 g (1 lb) ground beef or lamb
- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 2 slices of white bread, soaked in 1/2 cup milk
- 2 tablespoons curry powder
- 1 teaspoon turmeric
- 1 teaspoon ground cumin
- 1 tablespoon chutney or apricot jam
- 1 tablespoon vinegar or lemon juice
- 1/2 cup raisins or sultanas
- Salt and pepper to taste
For the Topping
- 2 large eggs
- 1 cup milk
- Bay leaves for garnish
Instructions
Step 1 – Prepare the Meat Filling
- Heat oil in a pan, add onions and garlic, and sauté until golden.
- Add the ground meat and cook until browned.
- Mix in curry powder, turmeric, cumin, chutney, vinegar, raisins, salt, and pepper.
- Squeeze excess milk from soaked bread, mash it, and add to the meat mixture. Stir well.

Step 2 – Assemble the Casserole
- Preheat oven to 180°C (350°F).
- Transfer the meat mixture into a greased baking dish and spread evenly.
Step 3 – Add the Topping
- In a bowl, whisk eggs with milk until smooth.
- Pour the custard mixture over the meat filling.
- Place a few bay leaves on top for flavor.
Step 4 – Bake
- Bake uncovered for 35-40 minutes until the custard is set and golden brown.
- Remove bay leaves before serving.
Serving Suggestion
Bobotie is traditionally served with yellow rice flavored with turmeric and raisins. It also pairs wonderfully with chutney or pickled vegetables on the side.
